Here's a special sandwich you can whip up in about the same time it takes to make a tuna sandwich! Microwave it, or if you prefer, put it under the broiler.
Open Face Crab Meat Sandwiches
1 can (6 oz / 168 g) crab meat, drained and flaked 2 T (30 ml) chopped green onion 2 T (30 ml) mayonnaise 1 T (15 ml) lemon juice 1/4 teaspoon (1.25 ml) salt Dash pepper 4 slices bread, toasted and lightly buttered 4 large tomato slices 4 Swiss cheese slices
Combine crab meat, green onion, mayonnaise, lemon juice, salt and pepper. Put toast on a microwave-oven safe roast rack set in a glass baking dish. Put a tomato slice on each toast slice. Top with crab meat salad and a cheese slice. Heat uncovered in microwave oven 1 to 1-1/2 minutes on HIGH, or until cheese melts. Serve immediately. Makes 4 sandwiches.

Carnation, this sounds absolutely yummy! ;D I am going to make these Sat. for lunch. Maybe even for dinner! I just might use croissants instead of bread, too. I love seafood!!!!!! Thanks so much!

Hi Carnation,
I made this recipe on Tues. This is so good and not heavy, rich like the fake crab can be! Yummy! I did add 1 tbl. minced onions, 1 tsp. Monterey spice blend and 1 tbl. chives with the mixture. I used a King's Hawaiian sandwich roll for the sandwich. So good!!!!!!!!!!! This is a keeper!!!!
