Big Jim Fl sent me this recipe. I was so shocked to find a Coffee Cake with actual coffee in it, I decided must give this a try. My oven must be a bit cooler - it took close on 40 minutes before a skewer came out clean.

Coconut Coffee Cake
Preheat oven to 350degrees F.
1/2 cup bran cereal
1 cup coffee
1 tablespoon lemon juice
1/2 teaspoon vanilla
1/4 cup canola oil
1 1/2 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
2/3 cup brown sugar
1/3 cup dried coconut
In a large mixing bowl, combine the bran cereal with the wet ingredients. Mix well. Sift in the dry ingredients and all but 2 tablespoons of the coconut. Pour into an oiled 8-inch square baking pan. Sprinkle the remaining coconut on top, and bake for 25 minutes.
