If you are left with green tomatoes, don't just bin them. Apart from making various chutneys, you can store them away in a cool dark place. Egg boxes are ideal for the smaller tomatoes, stops them touching and prevents mould cross infection.
Take them out into the light when you want to use them and place in a bowl with an over-ripe banana. The banana gives off small amounts of ethylene gas, enough to make the tomatoes ripen. The same thing with hard pears, hard plums.
Works with most unripe fruit.
