Prep: 15 min, Cook: 20 min.
For 4 Servings:
1 egg, beaten 2 tsp. milk 1/3 cup grated Parmesan or cheddar cheese 2 Tbs. plus 2 tsp. all purpose flour 3/4 tsp. paprika 1/8 tsp. salt 1/8 tsp. pepper 3 ounces butter or margarine, melted 4 skinless catfish fillets, about 5 ounces each 2 Tbs. plus 2 tsp. sliced almonds, or sliced pecans Preheat oven to 350°F. In one bowl, whisk together the egg and milk. In another bowl, mix the next 5 ingredients. Dip each catfish fillet in the egg mixture and then in the cheese mixture. Arrange fillets in a baking dish. Top with melted butter and nuts. Bake for 18-20 minutes,or until cooked through. Serve with rice and vegetables.
