For some reason we always get boxes and boxes of dates at Christmas. Brings back so many memories of our time in Saudi, not always pleasant ones. Rather than let them sit there and finally binning them, give this recipe a try. I think you and yours will be pleasantly surprised.
Coconut and Date Squares
(Amount of servings depend on the finished square sizes, I would suggest 2" by 1")
2 cups brown sugar 1/2 cup cream 2 Tbsp butter 1/3 cup shredded coconut 1/3 cup chopped dates (or other dried fruit), I use a mix of mango and date. 1/3 cups chopped nuts of choice
In a heavy saucepan over medium heat, stir together the sugar, cream and butter.
Bring mixture to a boil and boil to soft ball stage. (I use a reliable thermometer, but you can use the drop in to cold water test, just as reliable).
Remove from the heat, cool to room temperature and beat until creamy. (have a he man on board to do this bit, DH or son)
Add shredded coconut, nuts and fruit (if using).
Continue beating until mixture holds its shape.
Pour into a well buttered, shallow pan and cool before cutting into squares.
