This yummy fish bakes in a cheesy butter, lemon and milk sauce and is rather simple to make.
Fish Fillets in Cheese Sauce
1-1/2 pounds (675 g) fish fillets 6 T (90 ml) butter, divided 2 T (30 ml) lemon juice 3 T (45 ml) flour Salt and pepper 1 cup (240 ml) milk 3 T (45 ml) grated cheese
Melt 2 T (30 ml) butter in an ovenproof casserole dish big enough to hold fish without layering the fillets too deep, and stir in lemon juice. Add fish fillets and bake at 350 F (180 C), basting occasionally, for 4-5 minutes. Remove from oven. Melt 2 T (30 ml) butter in a small saucepan, stir in flour, salt and pepper to taste and cook, stirring, until bubbly. Gradually stir in milk and bring to a boil, stirring constantly. Remove from heat and fold in 2 T (30 ml) cheese. Pour cheese sauce over fish, sprinkle with remaining cheese and dot with remaining butter. Return to the oven for 10-12 minutes until top is browned and fish is done.
Makes 4 servings.
