Walleye in Bacon Sauce
4 lbs. Walleye fillets ½ lb. Bacon, sliced and diced 3 Tbsp. Flour 2 medium onions, chopped 1 ½ c. boiling water ( I use milk) 3 Tbsp. Vinegar 1 Tbsp. Lemon juice
Fry bacon until crisp and remove and drain. Sauté the onions in the bacon fat until golden brown. Remove all but 2 tablespoons of bacon fat. Stir in flour, cook and blend. Return bacon to pan. Add the water or milk and stir. Let simmer for a few minutes and then add the vinegar and lemon juice. Place fillets in a well greased baking dish. Pour sauce over fish. Season with salt and pepper. Bake uncovered for 1 hour at 350 degrees.
