I received a copy of this recipe from my good friend Sue in NC today. I'm sure my family and I are going to love this, but the weather is still a little unsettled to get into the real salad dishes. Sue got this from one of her friends = thank you for sharing.
Corn Salad Recipe
2 cans yellow corn (drained) 1 medium chopped onion 1 cup chopped green pepper 1 large bunch of cilantro chopped 1 cup mayonnaise 2 cups shredded cheese 1 bag of chili cheese corn chips
A dash of the following spices: ground mustard garlic salt garlic powder black pepper chili powder
Mix everything in bowl together except corn chips. Refrigerate for 2 hours or up to overnight. Add crushed corn chips before serving. Enjoy!!
