Stuffed Salmon Roll
3 or 4 pound fresh whole salmon 1 pound bulk sausage 2 medium onions, chopped 1 medium green pepper, seeded and diced 2 cups small bread cubes 2 eggs, slightly beaten 1 teaspoon poultry seasoning 1 teaspoon paprika 1 cup dry white wine parsley lemon rounds
Saute sausage until partially browned. Add onions and green pepper. Cook vegetables until tender. Drain well. Mix remaining ingredients, except wine. Stuff fish. Tie together with string. Pour wine in baking dish. Bake at 350 for 30 - 40 minutes or until salmon is flaky.
