Prep: 15 min, Cook: 5 min, plus chilling time.
For 4 Servings:
1/2 cup white wine 3 peppercorns 1 cup water 1 lb. shrimp, shelled and cleaned 1/3 cup cottage cheese 2 tsp. fresh dill, or more to taste 1/4 cup plus 1 Tbs. buttermilk 2 tsp. lime juice, or to taste 1 mango, peeled, pitted and cubed 1 papaya, peeled, seeded and cubed mixed salad greens 1 ripe tomato, cut into quarters 1 lime, sliced Bring first 3 ingredients to a boil in a skillet or saucepan. Add shrimp and cook 3-5 minutes. Rinse with cold water, then chill. Mix next 4 ingredients in a food processor or blender. Combine shrimp, dressing, and fruit in a bowl, then chill at least 30 minutes. Wash greens and arrange on individual plates. Serve chilled salad on bed of greens. Garnish each plate with tomato and lime.
