;D Italian Shrimp Fettuccine a la Chris
2 Tbl. olive oil 1 c. fresh sliced mushrooms 4 green onions, sliced 1 Tbl. minced garlic 2 cans diced tomatoes, undrained (15 ½ oz. cans) ½ c. chopped fresh parsley ½ c. white wine (Chardonnay) ½ lb. fettuccine ½ lb. shelled and deveined uncooked med. shrimp 2 Tbl. lemon juice
In a large skillet, heat oil over med. heat until hot. Add mushrooms, green onions and garlic. Sauce 1 to 2 minutes. Stir in tomatoes, parsley and wine. Bring to a boil. Reduce heat and simmer 18 to 20 min. to allow flavors to blend. Cook fettuccine and drain. Add shrimp and lemon juice to tomato mixture and cook 1 to 2 minutes or until shrimp turn pink. Serve over fettuccine. Serves 4
