I make beef salad sandwiches with my leftover roast beef. You make it the same way you do chicken/tuna etc., salad I ground the roast beef first in an old fashion grinder but you could use whatever you have to ground it. The sandwiches are wonderful I also make hash, shred the roast beef up, use your broth, chop potatoes, (pretty small) add onion and put it in your crockpot for the day

I make soup with whatever is left.
Use chicken, beef stock or whatever you like. (start with 4 cups) Add equal amounts of vegs. broccoli onion carrot celery etc. Cook it about 20 minutes and it's ready.
It's really a nice change for lunch or part of a light dinner.
