For 4 Servings:
1 lb. whitefish fillets 2 Tbs. vegetable oil 3 scallions, cut into 1 inch pieces 2 cloves garlic, minced 1-1/2 tsp. freshly grated ginger root 1 Tbs. soy sauce 1-1/2 tsp. sugar 1-1/2 tsp. lemon juice 1 Tbs. cilantro 1/2 red chili pepper, seeded and sliced (wear gloves) Heat oil in a heavy nonstick skillet over medium-high heat. Fry fish in oil on both sides until lightly browned and cooked through. Transfer fish to a warm platter and keep warm. Fry scallions until soft. Add garlic and ginger and cook on low, stirring until soft and golden. Mix in remaining ingredients. Simmer 1 minute. Pour over fish and serve immediately.
