Herbed Lobster Roll Ingredients: 1 pound of cooked lobster meat 8 ounces cream cheese 1/2 cup low-fat mayonnaise 1 cup parsley leaves, coarsely chopped 1 tsp. Worcestershire sauce 2 tsp. lemon juice Salt and pepper 4 long hard rolls (5-6 oz. each) Instructions: Pick over the lobster meat to remove any membrane or shell and set aside a medium bowl. In the work bowl of a food processor, combine the cream cheese, mayonnaise, parsley, Worcestershire sauce, lemon juice, salt, and pepper. Puree the mixture and taste for seasoning. Add the cream cheese mixture to the lobster and stir or combine. Split the rolls lengthwise, leaving one long side attached, and spoon in the lobster filling. Wrap securely in plastic wrap followed by foil to pack for a picnic or enjoy right away.
