Salmon Patties2 1 can pink salmon -- drain and reserve liquid 1 lg. egg 1/2 cup flour 1 small onion or 1 bunch green onions chopped 1 tsp lemon juice 1 tsp Cajun seasoning Set these aside for now Reserved liquid from Salmon 1 tsp baking powder Remove bones and skin. Combine salmon, egg, flour, seasoning, lemon juice and onions. Mix well and add 1 tsp baking powder to reserved Salmon liquid mix well and add to salmon mixture. Immediately shape into patties and fry in hot oil over medium heat, till Brown turning once. Optional coating Put 1 cup of crushed crackers in a small bowl, set aside. Beat 1 egg in separate bowl. Dip patties in egg mixture and then in crushed cracker crumbs. ;D
