Stuffed Shrimp from Bev Neal (4/5/03)
½ lb. jumbo shrimp, cleaned deveined and butterflied 3 stalks green onions, sliced very fine 12 to 15 Ritz crackers, crumbed like fine breadcrumbs 4 Tbl. butter, melted 1 Tbl. minced garlic 3 triangles of WeeBrie (a mixture of white cheddar and brie) and 1 lg.triangle (cut) from wedge regular Brie, diced small 2 Tbl. white wine 2 Tbl. melted butter
Melt 4 Tbl. Butter mixed with minced garlic. Pour over sliced green onions and crumbs and mix well. Clean and devein and butterfly shrimp. Place mound of stuffing onto each shrimp and place in baking dish. Pour melted butter over shrimps. Place in oven and bake at 350 to 375 degrees for 10 to 20 minutes – or until cheese is melted and stuffing is lightly browned.
If you wish you can place stuffed shrimps on piece of foil on the grill and grill for 10 minutes or so.
I served this with linguine and an avocado. Also served a baked and buttered French bread baguette, sliced 3/4 of the way through.
