CRAB OR SALMON CAKES (makes about 5...double the recipe as this is good!!)
1 egg 1/2 cup finely crushed crackers 1/3 cup milk 1/2 tsp good quality dry mustard 1/4 tsp white pepper 1/4 to 1/2 tsp fine sea salt (depending on the crackers) 1/8 tsp cayenne 1 1/2 cups flaked cooked salmon or crab 1 TBS snipped fresh chives or green onions 1 TBS snipped fresh parsley 2 TBS extra virgin olive oil 2 TBS flour or fine corn meal lemon wedges for serving
In bowl, whisk egg and then add crackers, milk, mustard, pepper, salt, cayenne, salmon, chives and parsley. Add flour if needed to give the correct consistency to hold shape. Heat oil in frypan. Scoop up about 3 TBS of the mixture and drop into the hot pan, flatten and cook over medium heat until brown on both sides, about 5 minutes total. Serve with lemon slices.
