Prep/Cook Time: 25 min.
Ingredients:
2 cans (14 oz. each) Swanson(R) Chicken Broth (3 1/2 cups) 3/4 cup uncooked regular long-grain white rice 1 tbsp. olive oil 1 lb. fresh or frozen large shrimp, shelled and deveined 4 cloves garlic, minced 2 tbsp. lemon juice 2 green onions, thinly sliced
Directions:
HEAT broth in saucepan to a boil. Add rice. Cover and cook over low heat 20 min.
HEAT oil in skillet. Add shrimp and garlic. Cook and stir 5 min. or until done.
PLACE shrimp in bowls. Stir lemon juice into broth mixture and pour over shrimp. Top with onions. Serves 4.
