For each serving: 1 slice bacon 1 filet mignon, cut about 2 inches (5 cm) thick Salt and freshly ground pepper to taste 1/4 cup (60 ml) crumbled blue cheese
Fry the bacon in a skillet over high heat until almost crisp. Drain on paper towels and wrap around the side of the filet mignon, attaching the ends with a toothpick. Season the filet with salt and pepper and saute in a little bacon grease until browned on both sides. Transfer to a preheated 450F (230C) oven and roast to an internal temperature of 125F (50C) for medium rare, about 8 to 10 minutes. Top with the blue cheese and roast until the cheese begins to melt. Allow to rest at room temperature for 5 minutes before serving.
