Zesty Lemon Shrimp and Pasta from www.landolakes.com6 oz. uncooked penne pasta 2 tbl. Land O Lakes Butter 1 med. (1 c.) red pepper, cut into this strips 1 tsp. finely chopped fresh garlic 1/2 lb. fresh med. shrimp - peeled and deveined 3 tbl. lemon juice 1/2 to 1 tsp grated lemon peel freshly grated Parmesan cheese, if desired chopped fresh paarsley, if desired salt and pepper to taste Cook pasta according to package directions. Drain. Meanwhile, melt butter in 1--inch skillet until sizzling; add red pepper strips and garlic. Cook over med. heat, stirring ocasionally, until peppers are crisply tender (2 to 3 minutes). Add shrimp and lemon juice; stirring constantly, until shrimp turn pink - 1 to 2 minutes. Add cooked pasta and lemon peel, toss lightly. Sprinkle with Parmesan cheese and parsley, if desired. Season to taste with salt and pepper. Serves 3
