Prep: 10 min, Marinate: 1:00, Cook: 10 min.
For 4 Servings:
1/3 cup parsley, minced 1/3 cup unsalted butter, softened 2 tsp. shallots or scallions, minced 2 tsp. Dijon or stoneground mustard, or to taste 4 salmon steaks, 1 inch thick 4 sprigs watercress, optional Thoroughly combine first 4 ingredients and salt and fresh ground pepper to taste in a bowl. Refrigerate at least 1 hour. Prepare grill (rack 4 inches from fire). Season salmon steaks with salt and pepper to taste. Dot with half the butter mixture. Arrange buttered-side-up on the grill rack. Cook 4-5 minutes. Turn and dot with the remaining half of butter mixture. Cook an additional 4-5 minutes, or until center of fish is opaque. Transfer to plates and garnish with watercress if desired.
