Great Seafood Burger [diabetic friendly] A homemade seafood burger for the summer. 1/2 lbs fish (any white fish will do) 1/2 lbs shrimp 1/2 scallops 1 mashed potato [medium size nothing added] 1-2 eggs 1 tbsp mayonnaise 1 onion, finely diced 1 scallion 1/2 cup parsley 1 lemon 1 tsp Dijon mustard some self raising flour salt and pepper to taste Place all fish in a food processor, and process carefully so that it all breaks up but does not turn to mush.. Combine all the ingredients. Shape into burger size patties. dust with flour Grill for 10 to 15 minutes or until desired doneness. If cooking indoors, fry in light olive oil. Serve on your favorite bun with tartar sauce or shrimp sauce or alone with a salad.
