SALMON WITH POTATO, LEEKS AND PEAS [diabetic friendly] salmon or sea trout ~ steaks or or fillets one per person lemon for garnish potatoes 1 leek per 2 persons.. half cup frozen peas ~ defrosted... not cooked... pan fry fish in non-stick saucepan... lightly sprayed with oil 3 minutes either side, keep warm in oven meanwhile boil peeled and cut potatoes and sliced leeks together and mash as you would normally... add mashed peas and stir through.. re-warm in microwave... place a layer of potato mix on plate and lay a piece of the fish on top... and serve with lemon wedges...
