Spicy Catfish Fingers
Servings: 4
1 lb catfish fillets 1/2 t garlic powder 1/8 to 1/4 t cayenne pepper 3/4 c cornmeal 1/4 c flour 1/2 t paprika salt to taste vegetable oil
Cut fillets into 3x1x1/2 inch strips and set aside. Combine garlic powder, cayenne and salt, sprinkle a little on both sides of fish. Let stand a few minutes. Combine cornmeal, flour and paprika. Coat fish strips with cornmeal mixture. Pour oil to a depth of 1 1/2 inches in heavy skillet. Fry about 1/4 of the fish in hot oil, about 375 degrees, over medium high heat, about 1 minute or until golden. Remove and drain on paper towel. Repeat with remaining fish strips.
