Sweet & Sour Halibut Serve: 6 6 cups - water 1/4 teaspoon - salt 1 slice - onion 1 slice lemon 1 parsley sprig 5 peppercorns 2 pounds - halibut Sweet & Sour Sauce (recipe below) In large saucepan bring water salt, onion, lemon, parsley and peppercorns to simmer. Add halibut, cover and simmer 5 to 7 minutes, or until halibut flakes when tested with fork. Drain and serve with Sweet and Sour Sauce. Sweet & Sour Sauce 1 (8-ounce) can - pineapple chunks 4 teaspoons - cornstarch 2 tablespoons - sugar 1/4 cup - vinegar 1 tablespoon soy sauce 1/2 green pepper, cut into 3/4-inch cubes 3 green onions, sliced Drain pineapple, reserving syrup. Add water to reserved pineapple to make 1 cup. Combine with cornstarch, sugar, vinegar and soy sauce. Cook, stirring constantly, until thickened and clear. Add pineapple chunks, green pepper and green onions. Cook 1 minute longer.
