Hello -New here and I have way too much crab in the freezer. Someone gave my roomate about 12 fresh dungeness crabs (cleaned) (we live in Oregon) and they are way too much trouble to pick as we eat. Can I pick them ahead and just heat the cleaned meat in a casserole with clarified butter? We are both farm girls (old ladies now), so not born to seafood cookey. Thanks in advance. Bobbie

Hello and welcome to Nancy's Kitchen Message Board. I will try to answer your question! Do you plan to cook the meat before you freeze it? If so, take out the "mud vein" after you take the shell off. The dungeness crabs are a soft shell and you can do just about anything with the meat! I would steam the crabs instead of frying, baking, etc. Then put the meat from each crab into individual zip loks, mark and date and then freeze them. You could then make sandwiches (yummy!), casseroles, dips, bisques, etc. almost anything with the meat.
A couple of good places to see how to take care of, cook and use crabs would be: Alaska seafood web site, Florida seafood web site and California seafood web site. All 3 are great and have lots of information!
I use crab and shrimp lots in lots of dishes. My hubby and I love it, but have to space it out some because it is so rich.

Thanks for the replies. The crab is cooked (steamed) and frozen. I thnk I will just crack it and heat in a casserole of butter and to heck with the cholesterol police. We don't do this that often (oh, but we did have Eggs Benedict for dinner last nite........oh oh) Bobbie
