SWISS STEAK
Sprinkle a 1 1/2 inch thick piece of round steak with salt and pepper. Dredge with flour on both sides, then pound well with a wooden hammer, or edge of a heavy old plate. Keep dredging and pounding, until meat won't absorb any more flour. Cut into serving pieces. Melt 2 TBS drippings (or butter) in large iron skillet. when hot put in steak and brown it on both sides. Now cover with slices of onion and pour in enough boiling water to barely cover. Cover tightly and simmer for 1 ½ hours. You may occasionally have to add more boiling water.
