shrimp and feta cheese
i am sure everyone has a version of this delicious dish. yum, yum. this one is my favorite. i got it from a chef at a restaurant on santorini. he called it shrimp santorini! how sublime!
1 lb cleaned, deveined, fresh shrimp olive oil as needed 2 minced garlic cloves 1 large onion chopped 1 cleaned and deveined green pepper 4 soft ripe tomatoes 1/2 dry white wine
2 c rice 4 c hot water 2 TBS melted butter with 1/2 tsp ground cloves 3/4 to 1 c pine nuts, toasted
1 lb crumpled feta
1/4 c lemon juice with 2 tsp salt dissolved into it.
Cook the rice covered for 20 minutes or until tender.
while the rice is cooking prepare the shrimp.
heat enough olive oil in a pan and saute the garlic, onion, and green pepper for three to five minutes. add the tomatoes and wine. simmer until thick and pulpy. you could mash the tomatoes with a fork if you like.
meanwhile back to the rice: remove the cover. toss in the butter and cloves. mix well. then toss in the pine nuts. keep warm.
when the mix in the pan is nice and smooth and pulpy add the shrimp. cook five munutes, until pink and tender.
put the rice on a serving dish. pour the shrimp mix over the rice. sprinkle on the feta cheese.
serve. have the salted lemon juice ready as you like.
good with a salad of greens, cucumbers, and black olives. (i cheat and use ceasar dressing sometimes. hee hee)
