Basil Sautéed Scallops Prep: 5 min, Cook: 5 min. 2 Tbs. olive oil 1 scallion, minced 1 clove garlic, minced 1/2 tsp. basil, or 1 Tbs. fresh, chopped 2 lbs. sea scallops, trimmed and rinsed Heat oil in a heavy nonstick skillet over medium high heat. Add scallion, garlic and basil (if using dried) and sauté 30 seconds. Add scallops, and salt and pepper to taste. Sauté 3 minutes or until scallops are just cooked throughout. Remove from heat and stir in basil, if using fresh.
