Tamale Pie
4 TBS butter 2 cloves garlic, minced 1 medium onion, chopped 1 lb ground beef 1 large green pepper, chopped 1 cup corn kernals 1 - 14 oz can whole tomatoes, drained 1 TBS tomato paste 2 TBS chili powder 1 tsp cumin 1 1/2 tsp salt 2 1/2 cup milk 3/4 cup cornmeal 2 cups grated cheddar cheese 1/4 lb. fresh plum tomatoes, sliced 1/2 cup chopped green onions
Heat oven to 350*F. Butter a 2 QT casserole. Melt 2 TBS butter over high heat. Brown beef, garlic and onion. Stir in pepper, corn, canned tomatoes, tomato paste, chili powder, cumin and 1 tsp salt. Simmer on medium low heat for 10 minutes. Bring milk almost to a boil. Add remaining 2 TBS butter and 1/2 tsp salt. Whisk in cornmeal gradually. Simmer for 5 minutes. Remove from heat, add 1 cup cheese. Line sides and bottom of casserole with 2/3 cornmeal mixture. Pour in meat filling. spread evenly with remaining cornmeal mixture. Sprinkle with remaining cheese. Arrange fresh tomatoes on top. Bake uncovered for 40 minutes. sprinkle with onions and bake 5 minutes longer. Serves 6
