Cinnamon Orange Pancakes
1 cup whole-wheat flour 3/4 cup all-purpose flour 2 tablespoons wheat germ 1 tablespoon sugar 2 teaspoons baking powder 1 teaspoon ground cinnamon 1 cup fat-free milk 1 teaspoon grated fresh orange zest 3/4 cup fresh orange juice (2 medium oranges) Egg substitute equivalent to 1 egg, Vegetable oil spray
In a large mixing bowl, combine flours, wheat germ, sugar, baking powder, and cinnamon, stirring well. In a small bowl, whisk together remaining ingredients except vegetable oil spray. Pour milk mixture into flour mixture. Stir just until moistened. Don't over-mix. Preheat griddle or skillet over medium heat. Remove from burner and lightly spray with vegetable oil spray. Pour batter onto griddle, using 1/4-cup measure. (You should have 12 pancakes.) Cook until tops are bubbly and edges are dry, 2 to 3 minutes. Turn and cook other side for 2 to 3 minutes. Makes 6 servings of 2 pancakes.
