2 c unbleached flour 1 c brown sugar, packed 1 tbsp baking powder 2 tsps cinnamon 1/2 tsp nutmeg 1/4 tsp baking soda 1/4 tsp ginger 1/4 tsp cloves 1 15 oz canned pumpkin 1/2 c skim milk 2 egg whites, whipped 1/3 c fat-free sour cream
Directions: Preheat oven to 350 degrees. Prepare a bundt pan with cooking spray, set aside. Combine flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger and cloves in a large mixing bowl. In a medium mixing bowl, combine pumpkin, skim milk, egg whites and sour cream. Spoon the pumpkin mixture into the flour mixture and mix just until moistened. Pour batter into prepared pan. Bake 60 minutes.
