2 medium apples, peeled, cored and coarsely chopped 1 tbsp. sugar 1/2 tsp. ground cinnamon
TOPPING 2/3 cup flour 1/4 cup packed brown sugar 1/4 cup butter or margarine 1/2 tsp. ground cinnamon
BATTER 1 cup sugar 3/4 cup vegetable oil 1 large egg 1-1/2 tsp. vanilla extract 1-1/2 cups flour 3/4 tsp. baking soda 3/4 tsp. ground cinnamon 1/4 tsp. salt
Directions: Heat oven to 325 degrees. Spray 12 regular-size muffin cups with nonstick cooking spray or line with paper liners. In a small bowl, mix apples, sugar and cinnamon. Set aside. Stir topping ingredients in a small bowl with a fork or pastry blender until crumbs form. Set aside. In a mixing bowl, beat sugar into oil with an electric mixer on high speed. Reduce speed to medium and beat in egg and vanilla. Reduce speed to low and add flour, baking soda, cinnamon and salt. Beat until blended. Batter will be thick and gooey. Beat in apples. Spoon batter into muffin cups. Evenly scatter on topping. Bake 25 to 30 minutes until muffins test done. Cool in pan on wire rack. Yield: 1 dozen.
