1 cup sugar 1/2 cup margarine 2 egg 3 ounces frozen orange juice concentrate 1/2 cup buttermilk 1 teaspoon baking soda 1/2 cup chopped nuts 1 can mandarin oranges -- drained and chopped 2 cups flour 1/2 teaspoon salt
Directions: Cream sugar and margarine. Add eggs and orange juice. Add buttermilk, soda, salt, and flour. Blend well. Add oranges and nuts. Bake in greased and floured loaf pan for 1 hour in 350 degree oven. While still warm, put on rack with waxed paper underneath and top with glaze.
Glaze: 3 ounces frozen orange juice 3/4 cup powdered sugar
