Prep: 10 min, Cook: 20 min. 2 cups all purpose flour 1/2 cup sugar 1 Tbs. baking powder 2 tsp. lemon rind, grated 1/4 tsp. salt necessary 3/4 tsp. ground nutmeg 1 cup zucchini, coarsely shredded 3/4 cup milk 3 Tbs. vegetable oil 1 egg Preheat oven to 400°F. Combine first 6 ingredients in a bowl, and make a well in center of mixture. Combine remaining ingredients in another bowl and stir well. Stir into flour mixture until dry ingredients are just moistened. Divide batter evenly among nonstick muffin cups. Bake 20 minutes or until golden. Remove from pans immediately and let cool on a wire rack.
This recipe serves 12 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 12 only.
