Hush Puppies
6 Cups Vegetable Oil 1 1/2 Cups Self-rising Cornmeal 1/2 Cup Self-rising Flour 1/2 Teaspoon Baking Soda 1/2 Teaspoon Salt 1 Small Onion; finely minced 1 Cup Buttermilk 1 Egg; Lightly Beaten
Directions: Preheat oil to 350 degrees. Stir together the cornmeal, flour, baking soda and salt. Stir in the onion. Stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended, a few lumps are okay. Drop the batter, one teaspoon at a time, into the oil. Dip the spoon into water after each puppy is dropped. (or you can roll about 1 tbsp. in your hand into a ball & drop into the oil.) Fry until gold brown, turning puppies during the cooking process. Variation: For a sweet puppy, add two tablespoons of sugar.
