Zucchini Bread
3 large eggs 1 cup vegetable oil 1 1/2 cups sugar 2 cups zucchini- grated 2 teaspoons vanilla extract 2 cups flour 1/4 teaspoon baking powder 2 teaspoons baking soda 3 teaspoons cinnamon 1 teaspoon salt 1 cup raisins 1 cup walnuts- chopped
Directions: Beat eggs lightly in large bowl. Stir in oil, sugar, zucchini and vanilla. Sift flour, baking powder, baking soda, cinnamon, and salt onto wax paper. Stir into egg mixture until well-blended. Stir in nuts and raisins. Spoon batter into 2 well-greased loaf pans. (or use 4 mini loaf pans) Bake at 375 degrees for one hour or until center springs back when lightly touched with fingertips. Cool in pans on wire rack ten minutes. Remove from pans and cool completely.
