STRAWBERRY BREAD
3 cups flour 1 tsp salt 1 tbsp cinnamon 1 tsp baking soda 2 cups sugar 3 eggs, beaten 1-1/4 cups cooking oil 2 10-oz pkg frozen sliced strawberries, thawed / drained 1-1/4 cups chopped nuts
Directions: Preheat oven to 350 degrees. Lightly grease 2 loaf pans. Combine all dry ingredients in large bowl. Make a well in the center. Add eggs and oil; stir until moistened. Stir in strawberries and nuts. Bake for 1 hour or until done. Caution: do no overbake! Yields: 2 loaves.
STRAWBERRY BUTTER
1 package frozen strawberries in syrup, thawed 1 cup powdered sugar, sifted to remove lumps if necessary 1 cup (2 sticks) unsalted butter, very soft (no substitutions)
Directions: Puree strawberries in blender. Add powdered sugar. Gradually add butter, piece by piece. Blend until smooth.
