Banana Bread - Makes 2 - 9X5 loaf pans
3-1/2 cups all-purpose flour 1-1/3 cups sugar 2 teaspoons baking powder 1 teaspoon salt 1/2 teaspoon baking soda 1 cup butter flavored Crisco 1 cup chopped pecans 4 medium bananas, mashed 4 eggs, slightly beaten
Directions: Preheat oven to 350 degrees. Grease and flour 2 - 9" by 5" loaf pans. In a large bowl, mix the first 5 ingredients with a fork. Add the shortening. Use a pastry knife to cut it in. Then add the nuts. Add the mashed bananas and eggs and stir only until batter is moistened. Spread batter evenly in the two pans. Bake for 50 minutes to an hour. Use a toothpick to test for doneness. Cool in pans on wire racks for 10 minutes. Remove from pans and completely cool on wire racks. These make nice gifs, or delicious to serve to company. They also freeze well, so can make ahead and defrost.
