4 cups sweet potatoes, cooked and mashed 1 1/2 cups self-rising flour 1 cup sugar 1 cup coconut milk (or regular milk) Vegetable or canola oil Powdered sugar (optional) In a bowl, combine potatoes, flour, sugar and milk and stir well. Roll or form into balls. Fry in deep vegetable or canola oil until browned and cooked through. Place on paper towel and drain excess oil. Cool and serve warm. Serves how many: 6 to 10
