Spoonbread This is a pudding-like casserole. Serves 4-6
3 cups Milk 1 1/4 cups Cornmeal (white or yellow) 3 Eggs, beaten 2 Tablespoons Butter or margarine 1 teaspoon Salt 2 teaspoons Baking powder
In a large saucepan, gently heat 2 cups of milk. Slowly whisk in the cornmeal. Bring to a boil while stirring. Remove from the heat. Whisk in the rest of the milk. Slowly whisk in the beaten eggs. Whisk in the remaining ingredients. Lightly oil a medium casserole dish. Add the spoonbread mixture.
Bake in a 350 oven for 25-35 minutes or until the top is lightly browned.
