LEMONY MARMELADE MUFFINS
1/2 cup butter softened 3/4 cup sugar 2 eggs grated rind of 1 large lemon 1/2 cup orange or lemon marmelade 1/2 cup plain yoghurt 2 cups flour 2 tsp. Baking powder 1 tsp. soda 3/4 cup buttermilk or sour milk
GLAZE: Juice 1 large lemon 1/4 cup sugar
Cream together butter, sugar. Beat in eggs. Stir in lemon rind, marmelade and yoghurt. Stir together dry ingredients. Add to creamed mixture all at once. Pour in buttermilk, mixing til no dry spots remain. Heap into 10 greased large muffin cups. Bake at 375*F 20 minutes. Stir together lemon juice and sugar. Pour over top of hot muffins. Let stand 10 minutes before removing from pan.
