Gingerbread Pancakes
These smell wonderful when you are cooking them, and are delicious as well.
1 cup flour 1 Tbs. sugar 1 tsp. baking powder 1 tsp ground ginger 1/2 tsp salt 1/2 tsp baking soda 1/2 tsp cinnamon dash ground cloves 2 Tbs. molasses 1 Tbs vegetable oil 1 cup buttermilk 1 egg, slightly beaten
In large bowl, combine all the dry ingredients. In a small bowl , whisk together the wet ingredients. Slowly pour the liquid mixture into the flour mixture and stir until just moistened. Lightly grease a griddle or pan over medium-low heat and cook the pancakes for about 3 minutes on each side. Makes 6 medium pancakes.
Cinnamon Syrup
1 cup sugar 1/2 cup light corn syrup 1/4 cup water 1/2 tsp. cinnamon 1/2 cup evaporated milk, undiluted
In medium saucepan, stir all ingredients together except milk. Sirring constantly, bring to a boil over mediumheat. Boil 2 minutes. Remove from heat, stir in milk. cool 30 minutes. Syrup will thicken as it cools.
