Prep Time: 2 hours to marinate plus 10 min. Cooking Time: 15 min. Finishing Time: 0 min.
Ingredients needed:
Marinade 1/4 cup lemon juice 1/4 cup oil, vegetable 1/4 Worcestershire sauce 2 cloves garlic, chopped 1 T. dried rosemary 1 T. dried oregano 1/2 t. salt 1/2 t. pepper 1/2 cup sugar
Meat 4-1 1/4" thick Porterhouse Steaks
Method:
Place steaks into glass or glass ceramic dish. Combine all marinade ingredients in a mixing bowl. Pour over meat and allow to marinade 2 hours in refrigerator Remove from refrigerator 45 minutes before cooking and allow to sit at room temperature. Place oven rack at *top position. Preheat broiler until very hot Remove steak from marinade. Drain excess marinade. Season steaks lightly with salt & pepper. Place flank steak in broiling dish. Allow meat to brown before turning approximately 7 minutes. Turn and cook until steak reaches 130° F for rare when an instant read meat thermometer is inserted at the thickest part. Serve immediately.

Chef Tips: When placing the oven rack in the top position, it should not be at the very top, but the next shelf down. Make sure to always drain marinades from meat to avoid flare ups.
