3 c. flour 1 tsp. salt 1 tsp. soda 1/2 tsp. baking powder 1 c. chopped nuts (optional) 2 c. lemon yogurt (8 oz. size) 3 eggs 1 c. oil 1 3/4 c. sugar 1 Tbsp. lemon extract
Sift dry ingredients. Beat eggs until light and gradu- ally add sugar and beat well. Add oil, extract, and lemon yogurt. Add flour. Grease and flour well 3 (7 x 3-inch) or bread size pans. Preheat oven to 325 degrees. Bake 50 minutes for small size or 1 hour for large bread size. This bread is very moist but if you freeze, the lemon leaves the bread. Put in nuts. It makes a nice nut bread. Slice bread and put lemon yogurt on top. Add strawberries, more lemon yogurt. Doesn't need cream for strawberry short- cake.
