2 cups (480 ml) all-purpose flour 1 teaspoon (5 ml) baking powder 1/2 teaspoon (2.5 ml) salt 1/4 teaspoon (1.25 ml) baking soda 2 T (30 ml) butter, cut up 1/4 cup (60 ml) boiling water 1 egg, slightly beaten 1 cup (240 ml) sugar 1/2 cup (120 ml) orange juice 1 cup (240 ml) fresh blueberries
Grease the bottom and 1/2-inch (12-mm) up the sides of an 8x4x2- inch (20x10x5-cm) loaf pan; set aside.
In a large bowl, stir together flour, baking powder, salt and baking soda; make a well in center and set aside. Stir together butter and boiling water until butter is melted. In a medium bowl, combine egg, sugar and orange juice; stir in butter mixture. Add to the dry ingredients, stirring just until moistened. Fold in blueberries. Spoon the batter into the prepared pan.
Bake in a 350 F (180 C) oven about 60 minutes or until a toothpick inserted near the center comes out clean. Cool 10 minutes. Remove loaf from pan. Cool completely on rack. Wrap in foil and store overnight.
Makes 1 loaf (16 slices).
Per slice: 126 cal., 2 g total fat (1 g sat. fat), 17 mg chol., 138 mg sodium, 25 g carbo., 1 g fiber, 2 g protein. Dietary exchanges: 1-1/2 starch.
