1 cup self-rising cornmeal 1 tbsp light brown sugar 1 tsp salt 1 cup shredded carrot 2 eggs, separated 2 tbsp water 2 tbsp vegetable oil 3/4 cup boiling water
Combine first 4 ingredients in a large bowl. Combine egg yolks, 2 tbsp water and oil; mix well. Stir egg mixture into cornmeal mixture. Add boiling water and stir well. Beat egg whites (at room temperature) until stiff peaks form. Fold egg whites into cornmeal mixture. Spoon batter into a lightly greased 8-inch square pan. Bake at 450 degrees F. for 20 minutes or until bread is golden brown. Serves 9.
