I sent the following recipe to Nancy's Recipes Newsletter and thought I would follow up by adding it to All Easy Cookin. Fondly, Lor
Lemon Ricotta Pancakes
1 1/4 cups All-Purpose Flour 1/3 cup Sugar 2 tsp. Baking Powder 1/2 tsp. Baking Soda 1/4 tsp. Salt 1 cup Milk 3 Tbsp. Butter(melted) 2 Extra Large Eggs 1 cup Ricotta Cheese 2 Tbsp. Lemon zest 2 tsp. Lemon juice(fresh)
Mix all together and let stand in the fridge for approx. 1 hour. Fry as you would any other pancake.
