2-3 porterhouse steaks sea salt freshly ground peppercorns 3 tablespoons olive oil 1 small onion, finely diced 1 tomato, diced (or 1/3 cup Pomi diced tomatoes dried Chipotle peppers, as desired 3-4 cloves garlic, slivered 1/4 cup red wine vinegar 1/4 cup chopped fresh parsley or cilantro
Preheat oven to 475 degrees. Sprinkle steaks with salt and pepper. Heat olive oil in large saute pan and sear the steaks about 3 minutes on the first side. Turn steaks, and then add the onion, tomato, pepper and garlic. Saute 3 minutes. Add vinegar and parsley and cook about 2 minutes more. Place in oven and cook 3-7 minutes, depending on doneness desired. Serve with drippings and a great bottle of San Benito County red wine.
