Irish Tea Bread
Once the raisins are soaked, this authentic Irish fruit bread is ready for the oven in minutes. It's heavy with fruit and gently flavored with spice. This low-fat fruit bread is perfect with a cup of tea or coffee and becomes a no-fat treat if egg sutstitute is used.
2 pounds dark raisins 1 pound dark brown sugar, may be reduced to 3/4 pound 2 1/2 cups cold tea 2 eggs slightly beaten or equivalent egg substitute 4 cups self-rising flour 1 teaspoon nutmeg 1 teaspoon cinnamon
In a large bowl, combine raisisns, brown sugar, and tea, and allow to sit for 8 hours or overnight. Stir in eggs, flour, and spices, just to combine. Bake in 2 greased loaf pans at 325 degrees F for 1 1/2 hours. Allow to cool slightly before slicing. This bread freezes well.
The changes: 3/4 pound dark brown sugar is sweet enough for me. 2 cups each of unbleached and whole wheat flours, plus 2 teaspoons of baking powder and pinch of salt, for self-rising flour
